Gluten Free Mulberry Cake

IngredientsGluten Free Mulberry Cake

  • 6 eggs (preferably organic, free range)
  • 1 cup sugar (I have used raw castor sugar, even tried honey)
  • 2 ½ cups fresh or frozen mulberries (I freeze each season to enjoy all year)
  • 2 cups almond meal
  • ½ cup of flaked almonds


  • Preheat oven to 160C. Grease tin (equivalent of 22cm round) & line with 2 layers baking paper
  • Put eggs & sugar in food processor on high speed for 10 mins until thick
  • Add mulberries and almond meal then process a little more until combined
  • Pour into cake tin and sprinkle with flaked almonds to decorate
  • Bake for 1 hour, then test with skewer to ensure baked through (if skewer sticky, cook a little more)
  • Cool in tin
  • Serve as is with a dusting of icing sugar, or add your choice of cream, extra mulberries etc
