Ingredients

2 cups of freshly picked sweet basil

1/2 a cup of fresh mint

1-2 cloves of garlic

1/4 cup of fresh grated parmesan cheese

1/3 cup of olive oil

1/3 cup of toasted pine nuts

Method

  1. Roughly chop cloves of garlic and place in food processer.
  2. Add in the pine nuts (toasted can give an extra smoky flavour).
  3. Then add the freshly picked basil and mint leaves and parmesan.
  4. Gradually add the olive oil through the feed tube and process until pesto is well blended.
  5. Transfer to bowl and season with salt and pepper to taste.
  6. Use as a dip or pour over your pasta.
